I’m a trauma and acute care surgeon, Latina with Middle Eastern roots, long-time vegan, and devoted dog mom to my rescue pup, Arlo.
As a surgeon, I see the downstream consequences of chronic disease every day. Over time, it became impossible to ignore how often food sits upstream of what brings people into the hospital.
My own journey toward plant-based eating began over a decade ago, initially driven by compassion and ethical awareness. But as a physician and researcher, I couldn’t ignore the evidence. Again and again, the data shows that plant-forward, high-fiber dietary patterns are associated with lower rates of heart disease, diabetes, and other chronic conditions, and in some cases, disease reversal.
Food isn’t just fuel. It’s daily leverage for health.
